Hello everyone, we are cooking another delicious recipe. This recipe is also healthy and really easy to make! I know we all love easy recipes!! I called this meal as ' Stuffed Zucchini Boats With Chicken Filling '.

I saw many other this kind of recipes with filling zucchini cooking in the oven with different fillings. So, I decided to make my own type. Actually, whatever you filled these zucchinis with is going to be delicious probably! Either chicken, beef or something else.

This is one of the best that for sure! So, you have to try. I love zucchini with chicken together, both of them goes really good. And to make it healthy added some beans instead of any rice or something else. Lastly, no one likes dry food so filling needed some sauce and we got that from tomato sauce.

Pretty simple right? You know what I am always saying, simple is delicious. 

I love the fact that how everything inside these zucchinis making it so delicious! Even if there is someone who does not like zucchini in your house, they are going to love it! I do not need to tell you how healthy zucchinis are like all other vegetables. It is always good to make vegetables and fruits make a part of your meal plan.

This recipe has everything you looking for! It is delicious, pretty simple and ready in short time! There is different versions of zucchini filling with some stuff but I have to tell you this is one of the best and healthiest!!

  • 2 zucchini
  • 2 cup cooked chicken any type of chicken for instance thigh, breast or rotisserie
  • 1/2 onion
  • 1 medium size tomato
  • 2 clove garlic
  • 3/4 cup tomato sauce
  • 1 cup red kidney beans
  • 1/2 tsp olive oil less or more to just brush zucchinis
  • 1 tbsp olive oil use to cook
  • 1 tsp salt & black pepper
  • 1/4 tsp red pepper flakes
  • 1 tsp oregano
  • 1 tsp paprika
  • mozzarella to use on top
  • parmesan cheese to use on top
  • salt & black pepper this is to use for zucchinis before we cook in the oven


  • Cut each zucchini into two pieces and scoop middle part out.
  • Place them into oven tray and brush with olive oil. Add some salt and black pepper. Cook at 375F (180C) for 15 - 20 minutes till they get soft.
  • While zucchinis are cooking start for your fillings. Cut onion, tomato and garlic into small pieces.
  • Heat 1 tbsp olive oil and add first onion. Saute for about 3 minutes.
  • Add garlic and zucchinis middle part that we scoop out. Cook another 2-3 minutes.
  • Add cooked chicken. Cook little bit.
  • Add tomatoes and spices. Salt, black pepper, oregano, paprika and red pepper flakes.
  • Couple minutes later add beans. Mix and keep cooking.
  • Lastly add tomato sauce. Let it simmer for 15 minutes.
  • After everything cooked fill your zucchinis with chicken filling.
  • Add cheeses on top and cook for another 10-15 minutes or till cheese melt.


*While cooking filling after each item let it cooked for 2 - 3 minutes so it can combine with other items and take tastes from each other. 
*Calorie calculated without cheeses and spices. 
*Filling was enough more than 2 zucchini (with the size of zucchini I used, it can change depends on sizes of zucchinis). So, you can cook 1-2 more zucchini with same amount of filling.
