Yogurt Soup

Hello everyone, we are cooking another delicious soup which is also from Turkey. We are cooking ` Yogurt Soup `. 

I know it might be little different for some of you to make a soup with yogurt. But I promise it is so yummy! We all know how healthy oygurt for us. Mostly doctors suggest us to eat at least couple table spoon of yogurt everyday. Well, this is a delicious way to eat your yogurt.

That is one thing I love about soups which is in one bowl you can get many different vitamins and minerals from different ingredients at the same time. Especially, if you are type of person who does not like to eat vegetables etc you should add soup into your life. If you know the right way to make soup, it is healthy and delicious! 

I think that is why in a Turkish family`s meal you always see soup with their meal. And you are a mom trying to make your kids to eat some veggies every single day. But they do not! Kids! Try making delicious soups that they cant say no. It is important to make your fresh soup. Can or frozen soups are not going to give same things to you and your kids. Once you start making it, you will see how easy it is actually!

*I want to give some little tips about this soup:

- If you have a yogurt that is kind of going bad and has a sour taste, those yogurts are perfect to use with this soup. They are not unhealthy at all and not going to make your stomach bad. Instead of wasting, make soup! Think twice whenever you want to throw food away while there are kids dying because lack of food every single day! We all should learn how to use our food in better way and stop wasting even little bit of it!

-Also, I used my homemade yogurt in this recipe but you can use Greek plain yogurt. 

- Lastly, white rice absorb lots of water so if it will get thicker later feel free to add warer but add slowly. If you will add a lot you will ruin your soup. Be careful!

Yogurt Soup may not be familiar to most of you but I promise it does not taste like how you expected. It does not taste like yogurt first of all and it taste delicious! This soup is so simple to cook and of course we all know how beneficial yogurt is so this soup includes many good nutritions in it that yogurt has. Such a good way to warm yourself with a bowl of soup and take every good thing from yogurt!

Ingredients
  

  • 1/3 cup white rice
  • 4 cup water
  • 1 egg yolk
  • 2 tbsp all purpose flour
  • 1 cup plain yogurt greek plain yogurt or plain home made yogurt
  • 1 tbsp butter
  • 2 tbsp dry mint

Instructions
 

  • First we are going to start cooking rice. Add rice and water into pan, cover and boil it till rice cooked. 
  • *We are using lots of water for little bit of rice you might say well we are not cooking normal rice here both water and rice is going to be soup that is why we add lots of water.
    *Do not forget to stir once in a while to stop rice sticking bottom of pan.
  • While it is cooking, at the same time get a bowl add egg yolk, flour and yogurt. Mix it.
  • When rice is ready, take from rice water and start adding into mixture very slowly and stir it at the same time. *This step is so important so be careful to do it right way!
  • *The reason we are doing this is because we have egg in our mixture and our water is hot. If we try to mix those both together hot water will cook our egg which we don't want. So, by adding water slowly and stirring at the same time will stop cooking egg and at the same time will warm our egg mixture. 
  • After couple time(3) egg mixture will be warm enough for us to add into rice water. Keep stirring while doing this.
  • Add your salt as much as you want.
  • Take another small pan and add your butter and melt it.
  • Add mint and cook 1 -2 minute then add that into soup. Ready! Enjoy!

Notes

*It is so easy to make this soup but you should be careful with every step and how to do it. If you do anything in different way it might go all wrong so read steps carefully and feel free to watch video to be sure about every step.
