Hello everyone! Turkish Meatball Inegol Recipe is another delicious meatball recipe.
If you have been following me probably you know that I shared two different meatball recipes before. One was Turkish Meatball which is more like Turkish moms will make it a lot and it has spices in it. Another one was Meatball With Vegetables which is also delicious, type of meatball soup with lots of veggies. BUT this one is not like other two. 

Turkish food culture known with lots of delicious foods like kebabs, baklava, etc. Meatballs are also plays big role in this cuisine. There are many different meatballs recipes that came from very old times to nowadays. All of them are delicious and different then each other.

This meatball is called as Inegol Meatball. It does not include many spices like other one but what makes this one different is kneading time. This recipe includes 10 minutes kneading to be able go get that specific texture and taste. Also, waiting time after kneading is another difference. Again for this recipe we have overnight waiting time. Even though all these might look like too much it is not! The only hard work here is kneading and you can use your hand stand mixer like me if you have one. I used beater part for this kneading process.

Turkish Meatball Inegol Recipe

Turkish Meatball which is called as Inegol in Turkish is another delicious meatball from Turkish cuisine. There is only couple ingredients and couple steps you need to be careful. Enjoy!

  • 1 lb ground beef 80%-20%
  • 1 onion grated, drained and squeezed all excess water
  • 1 tsp salt
  • 1 tsp baking powder
  • olive oil or vegetable oil to cook needs to cover pan


  • Start with ground beef. I am using 80-20% ground beef. Take ground beef, grated onion that drained and squeeze all water, salt and baking powder into bowl.
  • We are going to knead for a long time. I have a stand mixer so I am using that with beat head. If you have one you can use it too. If not just use your hand. Knead ground beef mixture for 10 minutes. After 10 minutes texture is going to be mushy, sticky and soft.
  • When you are done cover it or take into another container with lid. It's going to stay in the fridge for overnight.
  • The day after take out from fridge and place in the cutting board.
  • Shape it how I show in the video. Like square or rectangle shape. Make top flat. It is not going to be neither thin or too thick. Thickness should be around same with one finger.
  • When it is ready we are going to cut it. For the best explanation, watch my video to see how I am cutting it. We are cutting first, horizontal than vertical. It is not like normal meatball shape. More like little tall meatballs. That is specific to this meatball.
  • When you finish cutting take oil into pan and heat it. Oil needs to cover pan but we do not need more than that.
  • Once oil is hot enough start frying meatballs. Give around 2-3 minutes to each sides. In total it will take about 8 minutes to cook a whole meatball. It is going to turn brown outside but juicy inside. When they are done eat while its still hot. I served with potato wedges. You can serve with rice, pasta, soup or salad. Enjoy!

    • Make sure to follow steps to get best result of this meatball. It is important to knead for a long time and good. Also, it is important to let it sit in the fridge for one night.
