This recipe includes pretty simple ingredients and very short time. Let's get cooking!

I saw many different recipes when I search for couscous salad online. Mostly, what I see was actually Kisir. Well, I do not know if that is what they call as couscous in different countries but what we make Kisir with is actually way different than what we call couscous. We use Bulghur which made from wheat. On the opposite, couscous is actually same with pasta. And in this recipe couscous you can find as Pearl Couscous. They are selling these at Walmart and other stores with rices and pastas. 

I love to cook simple recipes with you! This is one of them. We have couple simple ingredients and need very short time to prepare this delicious food. 

This recipe is perfect as a side dish, appetizer, salad, pasta and good option for the ones who are vegetarian!

It is one of those simple, easy and quick recipes! We are making Couscous salad that I am sure you never had before!!

Ingredients
  

  • 1 1/2 cup water cold or room temperature
  • 1 cup pearl couscous
  • 1 corn or 1 cup
  • 1/4 cup roasted red pepper
  • 3 tbsp chopped parsley
  • 1 clove garlic
  • 1 tbsp butter
  • 2 tbsp greek plain yogurt
  • 3 tbsp mayo

Instructions
 

  • Cook couscous. Simply, boil water. Add couscous and butter into boil. Lower heat (make sure it is boiling before turning heat down), stir and cover it. Give about 8 - 10 minutes to cook. It will be ready!
  • When couscous cooked let it cool down.
  • Cut all vegetables. Corn (if you are using fresh like me), roasted red pepper and parsley. Add them into medium size bowl.
  • Smash garlic add that into bowl too.
  • When couscous get cold enough add that into bowl with mayo and yogurt.
  • At this point, you can add some salt and pepper to taste. Give it a good mix.
  • Enjoy!
