If you have been following me I love soups and those type of foods. Stew is one of them. Basically, any food that has juice in it is delicious for me. I just believe they are healthier (I know not all of them) but they definitely tastier. Every ingredients boiling together and creating that juice. That is heaven!! I love that so much. It is full with different nutritions and tastes. 

That is a reason I love my Chicken Chili so much. Not just that soups are my favorite too! Drinking a hot bowl of soup always make me feel better. If you are like me while we are in Fall Season you should try Butternut Squash Soup or my other favorite Red Lentil Soup.

I am calling this stew is as a healthy recipe because we are cooking with Turkey instead of another meat with lots of fat in it and it includes many veggies. Every ingredient can replaceable and will be delicious probably but this recipe just exactly how it is very satisfying with its taste and everything else that you can think of.

Turkey Meatball Stew

Turkey Meatball Stew/Soup is one of the delicious, healthy and easy to cook food that you can ever have! Everything is in one pot and full with many nutritious from vegetables, natural fat from chicken broth and low fat ground turkey!

Ingredients
  

  • 1 1/2 pound ground turkey
  • 1 egg
  • 1/2 cup bread crumb
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp thyme
  • 1/2 onion
  • 2 clove garlic
  • 1 carrot
  • 1 tomato
  • 2 medium size potato
  • 1 can green peas
  • 1/3 cup tomato sauce
  • 2 cup chicken broth
  • 2 - 3 tbsp olive oil

Instructions
 

  • First, prepare meatballs. Ground turkey, spices, egg and bread crumb going into one bowl.
  • With spoon or hand mix them really good. Wrap and let it sit in the fridge till we are preparing other ingredients.
  • Cut all the vegetables onion, garlic, carrot, potato, tomato medium size. It needs to be chunky.
  • Heat olive oil into deep pan.
  • Shape your meatballs with two spoon like i did in the video but if you want perfect meatball shape use your hands.
  • Add meatballs into pan and sauté till they get brown outside. We are not going to cook yet trying to let their taste go to oil and use same oil to cook veggies. That is going to make our stew very tasty.
  • When they are brown at least from one side and kind of sticking into pan take them out.
  • Use same oil and if you need more (because turkey does not include too much fat it might observe oil) add little bit more oil.
  • Add all vegetables except tomato and peas into pan. We are doing same thing we did with meatballs to our vegetables. Just saute them for couple minutes not trying to cook.
  • Bottom of your pan can be brown looking like burn but it is the oil that has all the tastes in it. It is going to come off once we add broth. Do not worry.
  • Add tomato and 1 minute later add tomato sauce and chicken broth.
  • After adding chicken broth with your spoon take off that brown part on the bottom of our pan.
  • Add meatballs and let it simmer 30 minutes to 1 hour.
  • When stew is ready add peas and serve while it is hot.
  • After this step it is going to be ready to eat. Enjoy!

Notes

  •  If you are going to use uncooked or frozen peas add with vegetables.
  • You can use normal ground beef instead of ground turkey.
