Spinach Borek (Pastry)

Hey everyone, I have another Turkish recipe for you. This meal is called ` Spinach Borek ` (Spinach Pastry). Also, same type of recipe is making in Greece and known as Spanakopita. 

Borek can be making with any type of ingredients like vegetables and meats. Spanakopita, as I know, is making with spinach, feta cheese and onion. They are almost same. So, today I am also going to use same ingredients with Spanakopita.

  • 1 Bunch Of Spinach
  • 4 - 5 Green Onion
  • 250 Gram Feta Cheese
  • 3 Tbsp Of Olive Oil (1 tbsp for sauce, 2 tbsp for cooking)
  • 1 Tbsp Of Yogurt
  • 1 Tsp Of Salt & Pepper
  • 1/4 Tsp Of Red Pepper (not necessary)
  • Half Of 1 Rolls Phyllo Dough

How To Cook Spinach Borek:

  • First, cut your spinach and green onion.
  • Heat 2 tbsp of olive oil in the pan and add salt, pepper, red pepper flakes (if you want). Cook your spinach and onion mixture. 
  • While they are cooking smash your feta cheese in one bowl. 
  • After spinach cooked, add them into bowl and mix with feta cheese.
  • In another small bowl mix egg, milk and rest of olive oil. Stir them.
  • Take an oven pan. Make sure to oil bottom.
  • Put 6 - 7 piece of phyllo dough and add half of spinach mixture. 
  • Pour equally little bit of egg and milk mixture with spoon equally on every side.
  • Repeat this two times. At the end close top of your borek with phyllo dough pieces on the sides. Add couple piece on the top to close all open places.
  • Add yogurt in the rest of egg and milk mixture. Stir. 
  • Add that mixture top of borek and add some sesame seeds.
  • Cook at 375 for 25 - 30 minutes till it cook and get gold color on the top.
  • Enjoy!
