Quinoa Greek Salad

Hello everyone, Quinoa Greek Salad  is basically you can understand from its name is too kind of greek salad added quinoa.

It is healthy that is for sure! Quinoa is one of the healthy items that these days. It has lots of nutritious and benefits for us! Healthier than rice and high in protein. So, it is a new trend item we can say.

While some people like quinoa, some don't. I think it depends on how you eat it. I do not like just by itself. But i do like to mix with things to make eating more easy. It is perfect to mix with salads! And that is what you can see in many restaurants menu. Salad with quinoa!

Well, that is how it makes me think why not greek salad than? It has many different tastes in it with mix of tomato, cucumber, feta cheese and olive. I added some spices and made with lime. I was very happy with the result! It was a perfect lunch option to take if to job by itself or as a side dish with something. Or actually, you can even add some meat in it like grill chicken will be delicious!

It is very easy too! We only need to cook quinoa and all other needs a quick cut. Once you add them into bowl and give it a good mix, it is ready!

Ingredients
  

  • 1/2 cup quinoa
  • 1 tomato
  • 1 medium size cucumber not long (English) cucumber
  • 1 cup feta cheese
  • 1/2 cup black olive
  • 1/2 lime
  • 2 tbsp olive oil
  • 1 tsp salt & black pepper
  • 1 tsp oregano

Instructions
 

  • Cook quinoa. When it cooked let it cool down.
  • Cut tomato, cucumber and feta.
  • And all of them into a bowl with black olive, olive oil, spices and lime.
  • Mix it really good.
