Hello everyone, we are cooking another delicious traditional food which is called Kisir.

It is another my favorite dish. I love to eat especially summer when weather is hot because it has such a fresh taste that what exactly you need when hot weather does not make you want to eat anything.

Also, it is healthy! Because Kisir made from Bulgur (Burghul) that made from cracked wheat. Even some people says healthier then brown rice but if you already have brown rice in your home I have such a healthy option for that too! Check my Brown Rice With Carrot And Lentils recipe!

 I did not know but Indian people also use it a lot but they just call with different name. You can find in any Turkish store if you have near by or some local stores also has. Some people even says healthier then brown rice! You should definitely check benefits of Bulgur online to learn more!!

Kisir is one of the traditional Turkish cuisine that is also very popular. It is such a good option for vegetarian, vegan or healthy diet.

Ingredients
  

  • 1 cup bulgur
  • water
  • 3 tbsp tomato paste
  • 3 green onion
  • 1/3 cup chopped parsley
  • 2 tbsp olive oil
  • 1 tsp salt
  • lemon
  • lettuce optional
  • cucumber optional
  • tomato optional
  • balsamic glaze optional

Instructions
 

  • Put your bulgur into bowl and boil water on the side. We are going to make our bulgur wet with hot water. That is why we do not need to much water just be sure all parts of it is wet enough then cover with a plate and let it sit 30 minutes. We are going to repeat this 1 more time. There is 2 different kind of bulgur one is thing other is thicker. If you have thicker like me do 2 or 1 might be enough. We basically cooking bulgur with that way so just check if it is soft enough or not.
  • After bulgur is ready, chop parsley and green onion add into bowl.
  • Add tomato paste, salt, olive oil and mix it. It is ready but if you let it sit for about 15 minutes more or do day before it will taste better.
  • Cut some tomato and cucumber on the side and wash little parts of lettuce.
  • Place lettuce first then put kisir inside then on top or side place your cucumber and tomato. 
  • If you want pour some balsamic glaze on top. Enjoy!
