Green Lentil Meal

Hello everyone! I actually just find out this delicious meal in a day I did not want to eat meat but still want something delicious and this Green Lentil was it!!

This is a meal that you can cook in a lazy day and also if you do not have too much things at home to cook. Literally you only need 3-4 ingredients for the whole recipe.

It is also vegetarian / vegan recipe for the ones who do not eat meat. For that only thing you need to do is replace beef broth with normal water. You can still do this if you do not have beef broth. Also, I never tried with meat in it but I know it also will be delicious if you want to add some meat in it either ground beed or cube meat. 

Lentils as we all know have lots of proteins and they are healthy option which is very popular these days for keto diet and those things. I am not keto at all I just love using lentil, bean and all other amazing things nature gives us. They are delicious and very good for our body! You can check my other healthy recipes if you like me. I have ones with beans, lentils and full of veggies!

Healthy, full of protein and easy meal that has a vegetarian option which also include only couple ingredients! Perfect for lazy days, vegetarians or vegans, or when you are out of ingredients at home!

Ingredients
  

  • 1/2 cup green lentil
  • 1 potato
  • 1 carrot
  • 1/2 onion
  • 1 clove garlic
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • water or beef broth

Instructions
 

  • Take your lentils into little pan with water and boil for 8-10 minutes than drain it. This step is to get rid of dark water that is coming out from lentil.
  • Cut onion, potato, carrot and garlic into small pieces.
  • Take olive oil into pan and start cooking with onion with little bit salt they will get soft. Cook couple minutes.
  • Add potato cook couple more minutes than add carrot do the same thing.
  • When they are ready add lentil than tomato paste cook couple more minutes.
  • Lastly add beef broth. It needs to cover lentil and vegetables so there is no mexact measurement for it. If you are vegetarian/ vegan or just do not have beef broth use normal water or even vegetable stock.
  • Cook till lentil and vegetables cooked. Enjoy!

Notes

  • I serve with garlic yogurt because we like yogurt with our food but you can just eat by itself. 
  • Calorie calculated without beef broth.
