Hello everyone, we are making cheesy egg breakfast toast baked in the oven! This delicious and easy to make recipe is a good option to make your breakfasts more enjoyable!

I used two different kind of cheeses on this toast. If you are a cheese lover like me you are going to love this combination of cheeses, parsley and egg. Simple little touches make it delicious!

While butter is melting and making toast crunchy, cheese melt on the top while egg cook with tomato's juice plus little bit crunchy and sweet taste from pepper make it better. 

You can make double even triple or more of the recipe to feed all of your family or just make small amount and eat it fresh. Mix everything in the bowl really quick and pop up to the oven for 12 - 15 minutes. Do not overcook your egg it wont taste as much good as mine. It will be little juice from tomato and softness in the middle from cheeses but also crunchiness on the sides of the toast.

Cheesy Egg Open Breakfast Toast

Think about a toasted bread in the oven with cheesy egg mixture on top with fresh delicious taste for breakfast! Here is an easy to make awesome breakfast idea recipe for you!

Ingredients
  

  • 1/4 Green Bell Pepper feel free to use another pepper type (red, orange, etc.)
  • 1/2 tomato
  • 4-5 branch parsley
  • 1/2 cup shredded mozzarella
  • 1/2 cup crumbled feta cheese
  • 2 egg
  • 1/4 tsp salt & black pepper cheese should be already salty that is why i put just a little bit you can increase amount of salt if you want
  • 3 pieces toast
  • butter (room temperature so we can spread on bread) just enough to be able to spread on bread

Instructions
 

  • Cut tomato and pepper julienne type big pieces.
  • Chop parsley.
  • Add cheeses, eggs, parsley, salt and pepper into bowl. Mix them.
  • Spread butter on bread. Make sure butter is room temperature so you can do it easily.
  • Take an oven pan and place parchment paper. Place toast breads in it.
  • Split cheesy egg mixture on breads equally.
  • At last, add 1 piece tomato and 2 pieces of pepper on each. Cook 350 F (180 C) for 12 minutes or till cheese melt and egg cooked.

Notes

  • Do not over cook. It should be melted cheese soft but little juicy from tomato. Egg will be cooked do not get confuse because of cheese and think it is not cooked.
  • Calorie calculates for three breakfast toast without butter.
