Blackened Chicken Meal Plate

Hello everyone, Blackened Chicken Meal Platter is exactly what you need in busy days, weekends, gatherings or anytime you want delicious food!

This recipe is so easy! No long prep needed in this recipe!! The only thing might take little longer to cook is brown rice but still it does not require any hard work from you at all. You just need to put in a pan with water and wait! 5 minutes for peppers and onion and the only thing left is chicken which also need no effort but still end up very juicy and tasty!

Some of you might have a hard time while cooking chicken. It can dry and all that but in the video I showed you how to cook to get a good result from your chicken without any problem. As like all of my other recipes, just follow every step carefully. Your chicken is going to cooked but not overcooked and still juicy and soft!

And for the blackened seasoning do not go and buy from store instead prepare at home really quick. Even those seasoning you buy from store has chemicals in it. This is also a healthy option for a good meal. We are using brown rice instead of white rice, we do not fry anything just cook with little bit oil. I love when I have healthy food but I also can satisfy with taste and everything.

Ingredients
  

  • 1 chicken breast
  • 1 colorful bell peppers we are using different types of bell peppers but in total amount is going to be around 1 bell pepper
  • 1/2 onion
  • 1 cup brown rice
  • 1 avocado
  • salsa
  • sour cream
  • shredded cheese you can use any kind I used a mix of cheddar and mozzarella
  • jalapeno peppers
  • 2 tbsp olive oil
  • blackened seasoning I have a homemade blackened seasoning recipe on my blog check that to make it at home easily.

Instructions
 

  • First put your brown rice to cook because it takes 30-35 minutes in total. It is simple just 1 cup rice and double water. Boil it when it start boiling reduce heat and cover let it cook 30-35 minutes.
  • Let's start cutting our peppers and onion like julienne shape.
  • Heat 1 tbsp of olive oil.
  • Add onions on one side of the pan and peppers on the other side of the pan.
  • Cook them on medium heat till they get soft. And take them into a plate.
  • In the same pan add another 1 tbsp of olive oil.
  • Season chicken breast both sides. Put into pan when oil is hot enough.
  • Use low-medium heat and cover chicken to have a juicy delicious chicken breast.
  • Turn other side of chicken after a while later so it can cook evenly. Also, add little bit of water so it will help our inside of chicken cook without getting hard.
  • When chicken cooked sliced it into thin pieces or whoever you want.
  • When chicken and rice is ready place them into a big long plate. First place rice and chicken on one side with peppers and onions on the other side of the plate.
  • Put 1 sliced avocado on another side of the plate. On top if you want add some jalapeños.
  • Serve with shredded cheese, salsa and sour cream. You can add tortilla too if you want!
